Je la fais le moins sucr\u00e9e possible et, de toute fa\u00e7on, si elle l&#8217;est, c&#8217;est au sirop d&#8217;\u00e9rable. J&#8217;y ajoute d&#8217;autres fruits qui, malgr\u00e9 le roulement acc\u00e9l\u00e9r\u00e9 de la coupe \u00e0 fruits, auraient tendance \u00e0 se montrer sous un mauvais jour. Les bananes noircissent. Malgr\u00e9 toutes les pr\u00e9cautions \u00e0 les manipuler, les pommes montrent des bleus comme des boxeurs apr\u00e8s un combat. Les oranges se fl\u00e9trissent. Les poires se liqu\u00e9fient.<\/p>\n<p>Moi, j&#8217;aime la tarte aux pommes, toute b\u00eate, toute simple. On fait de la p\u00e2te, farine, beurre. On coupe les pommes. On assemble et on en enfourne. R\u00e9sultat garanti. On peut compliquer en ajoutant un \u00ab\u00a0appareil\u00a0\u00bb avant le four. Un peu de cr\u00e8me, un peu de sucre, un ou deux oeufs, on est dans le plus simple\u00a0appareil, bien s\u00fbr.<\/p>\n<p>On peut faire une petite compote pour mettre en dessous des pommes.<\/p>\n<p>Malgr\u00e9 tout, les pommes restent croquantes. On a beau faire des tranches fines, elles gardent un petit croquant. Alors si on veut aller jusqu&#8217;au bout, on retourne le tout et on fait une Tatin. L\u00e0 les pommes sont cuites sous la p\u00e2te et deviennent moelleuses.<\/p>\n<p>Mais aujourd&#8217;hui, j&#8217;en essaie une autre. Je vais faire revenir les pommes \u00e0 la po\u00eale avant de les mettre dans la tarte, comme des oignons\u2009! Je ne veux pas qu&#8217;elles partent en compote, je veux juste qu&#8217;elles deviennent tendres. Quand elles ont atteint la texture id\u00e9ale, un petit coup de calva pour les r\u00e9veiller.<\/p>\n<p>Comme c&#8217;est P\u00e2ques, l&#8217;appareil sera plus \u00e9labor\u00e9: poudre d&#8217;amande, sucre roux, farine.<\/p>\n<p>Ouh, c&#8217;est un peu riche tout \u00e7a\u2009!
