Jetez-les dans une casserole d&#8217;eau froide, une fois \u00e0 \u00e9bullition, laissez 3 minutes. Retirez la deuxi\u00e8me peau des marrons, c&#8217;est un peu fastidieux. D\u00e9posez les ch\u00e2taignes dans une nouvelle casserole d&#8217;eau froide, puis laissez \u00e0 faible \u00e9bullition pendant 10 minutes. Cette dur\u00e9e est variable selon la quantit\u00e9 et la taille des marrons, s&#8217;ils sont trop cuits, ils r\u00e9duiront en pur\u00e9e.<\/p>\n\n\n\n<p class=\" eplus-wrapper\">\u00c9tape 2<br>En fin de cuisson, rafraichissez-les dans de l&#8217;eau tr\u00e8s froide. Faites chauffer sur feu moyen l&#8217;eau et le sucre, quand le sucre devient translucide, augmentez le feu. Lorsque la pr\u00e9paration bout, ajoutez la gousse de vanille fendue en 2 et laissez \u00e0 \u00e9bullition encore 3 minutes pour former un sirop.<\/p>\n\n\n\n<p class=\" eplus-wrapper\">\u00c9tape 3<br>Incorporez les marrons. Lorsque l&#8217;\u00e9bullition reprend, laissez 1 minute \u00e0 fr\u00e9missement. \u00c9teignez le feu et laissez reposer le tout jusqu&#8217;au lendemain (24 heures). Le lendemain, \u00e9gouttez les marrons et r\u00e9servez le sirop. Portez ce dernier \u00e0 \u00e9bullition 2 minutes.<\/p>\n\n\n\n<p class=\" eplus-wrapper\">\u00c9tape 4<br>Versez-y les marrons et laissez fr\u00e9mir 2 minutes avant de couper le feu. R\u00e9p\u00e9tez ces op\u00e9rations les troisi\u00e8me et quatri\u00e8me jours.
