farine de ma\u00efs, p\u00e9trir et placer au froid\u00a0<\/li>\n<li>P\u00e9trissage de la p\u00e2te principale (frasage) pour obtenir une boule<\/li>\n<li>20 minutes de repos<\/li>\n<li>p\u00e9trissage par \u00e9tirage\/rabat pour obtenir une\u00a0belle consistance lisse<\/li>\n<li>ajouter la p\u00e2te de ma\u00efs <span style=\"text-decoration: underline;\">froide<\/span><\/li>\n<li>incorporer compl\u00e8tement<\/li>\n<li>Pointage 1h \u00e0 temp\u00e9rature ambiante (ou 10h au froid)<\/li>\n<li>Fa\u00e7onnage : d\u00e9gazer et fa\u00e7onner en longueur\u00a0<\/li>\n<li>mettre le topping (tremper le dessus dans un peu d&#8217;eau et poser sur de la polenta fine<\/li>\n<li>scarifier en coupe saucisson tous les 1-1.5 cm<\/li>\n<li>Appr\u00eat \u00e0 temp\u00e9rature : 1h<\/li>\n<li>Cuisson: 16 min \u00e0 250\u00b0 + 10 min s\u00e9chage hors du moule<\/li>\n<li>Ressuage sur
