un , sel apr\u00e8s le frasage, bassinage, 2h, un boulage, 8h et un p\u00e9trissage)<\/p>\n<h1>Temps<\/h1>\n<ul>\n<li>5 minutes<\/li>\n<li>2 heures<\/li>\n<li>5 minutes<\/li>\n<li>5 heures<\/li>\n<li>45 minutes<\/li>\n<li>total 7 h<\/li>\n<\/ul>\n<h1>Recette<\/h1>\n<ol>\n<li>M\u00e9langer l&#8217;eau et le sel<\/li>\n<li>Ajouter le levain et d\u00e9layer<\/li>\n<li>ajouter la farine et m\u00e9langer pour int\u00e9grer tous les \u00e9l\u00e9ments<br \/>\non obtient une p\u00e2te tr\u00e8s collante et rigide<\/li>\n<li>Laisser sur le comptoir pour 1 heure ou deux (\u00e0 18\u00b0C)<br \/>\nla p\u00e2te ne gonfle pas, c&#8217;est normal, mais elle devient plus \u00e9lastique<\/li>\n<li>mettre sur le plan de travail et former en boule pour augmenter la tension de surface<br \/>\nne pas ajouter de farine<\/li>\n<li>remettre dans le plat<\/li>\n<li>laisser reposer 4 ou 5 heures \u00e0 la temp\u00e9rature de la pi\u00e8ce<br \/>\ncette fois la p\u00e2te gonfle&nbsp;<\/li>\n<li>mettre sur le plan de travail<\/li>\n<li>plier 4 fois \u00e0 90\u00b0 sans p\u00e9trir pour garder l&#8217;air dans la p\u00e2te<br \/>\nne pas ajouter de farine<\/li>\n<li>fariner abondamment le banneton&nbsp;<\/li>\n<li>retourner la p\u00e2te et la rouler en tirant un peu \u00e0 chaque fois puis former la boule<\/li>\n<li>ajouter encore de la farine sur la surface<\/li>\n<li>d\u00e9poser dans le banneton<\/li>\n<li>laisser prendre la forme pour 2 heures<\/li>\n<li>d\u00e9mouler sur un morceau de papier parchemin<\/li>\n<li>retirer la farine en trop<\/li>\n<li>faire cuire dans une cocotte ferm\u00e9e pour 30 minutes et 15-20 minutes ouverte<br \/>\nou sur une plaque avec un bol d&#8217;eau pour 30 minutes et retirer l&#8217;eau pour 30 minutes suppl\u00e9mentaires<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<table style=\"border-collapse: collapse;
