Dans un bol, mettre l&#8217;eau, la levure, 120 g farine. M\u00e9langer, couvrir d&#8217;un film \u00e9tirable et laisser&nbsp;<a href=\"https:\/\/cuisine.journaldesfemmes.fr\/astuces-termes-et-tours-de-main\/1958410-lever-definition\/\">lever<\/a>&nbsp;toute la nuit au r\u00e9frig\u00e9rateur.&nbsp;<\/li><li>Le lendemain, \u00e0 l&#8217;aide d&#8217;un robot-m\u00e9nager, p\u00e9trir pendant 5 minutes 330 g farine, le sel, le sucre, les \u0153ufs et le jaune, le levain.<\/li><li>Ajouter le beurre&nbsp;<a href=\"https:\/\/cuisine.journaldesfemmes.fr\/astuces-termes-et-tours-de-main\/1958523-pommade-definition\/\">pommade<\/a>&nbsp;et laisser le robot p\u00e9trir pendant 15 minutes. La p\u00e2te devient \u00e9lastique et se d\u00e9tache de la paroi du bol.&nbsp;<\/li><li>Verser la p\u00e2te dans un grand moule \u00e0 couronne (kouglof) en silicone. Couvrir d&#8217;un torchon et laisser&nbsp;<a href=\"https:\/\/cuisine.journaldesfemmes.fr\/astuces-termes-et-tours-de-main\/1958410-lever-definition\/\">lever<\/a>&nbsp;dans un endroit ti\u00e8de (four chauff\u00e9 \u00e0 150F) pendant au moins 2 heures.&nbsp;<\/li><li>Pr\u00e9chauffer le four \u00e0 160\u00b0C (320F)chaleur tournante. Mettre sur la sole du four 1 bol d&#8217;eau chaude. La vapeur rendra la brioche plus moelleuse. Enfourner et laisser cuire 25 minutes puis baisser la temp\u00e9rature \u00e0 140\u00b0C (280F)et poursuivre la cuisson encore 25 minutes.<\/li><\/ol>\n\n\n\n<figure class=\"wp-block-gallery columns-2
