{"id":1445,"date":"2013-05-06T18:03:20","date_gmt":"2013-05-06T22:03:20","guid":{"rendered":"http:\/\/pierrejean.com\/?p=1445"},"modified":"2020-03-14T07:50:50","modified_gmt":"2020-03-14T11:50:50","slug":"soupe-jaune","status":"publish","type":"post","link":"https:\/\/pierrejean.com\/atable\/soupe-jaune\/","title":{"rendered":"Soupe jaune"},"content":{"rendered":"<p>Apr\u00e8s le petit livre rouge, voici la soupe jaune.<\/p>\n<p>Je suis devenu le sp\u00e9cialiste de la soupe aux l\u00e9gumes, \u00e0 la courge, aux poireaux, n&#8217;en d\u00e9plaise \u00e0 la Reine M\u00e8re, \u00e0 la coriandre, au crabe, \u00e0 la patate douce, aux haricots beurre et \u00e0 tous les l\u00e9gumes qui restent dans mon frigo.<\/p>\n<p>Il faudra que je vous donne mes recettes, mais, aujourd&#8217;hui, j&#8217;avais envie de quelque chose d&#8217;autre. J&#8217;avais envie d&#8221;une soupe consistante et go\u00fbtue. Les l\u00e9gumes, c&#8217;est bon, mais m\u00eame avec du tabasco, de la coriandre, du sel, de la courge poivr\u00e9e, \u00e7a reste un peu trop printanier. Donc je me lance&#8230; Je fais revenir des oignons dans une larmichette d&#8217;huile d&#8217;olive et pris d&#8217;une inspiration subite, j&#8217;ajoute une bonne dose de curry. Du bon curry bien fort, bien jaune, d&#8217;o\u00f9 le nom. Vous savez, ce curry dont il suffit d&#8217;ouvrir la bo\u00eete pour se retrouver dans un HLM de la banlieue nord, o\u00f9 les odeurs de Madras se m\u00ealent, sans peur, \u00e0 celle de Casablanca.<\/p>\n<p>C&#8217;est beau, \u00e7a sent bon et c&#8217;est le moment d&#8217;ajouter une tasse, au sens propre, de crevettes de Matane. Je laisse revenir pour que les crevettes prennent la saveur et j&#8217;ajoute la coriandre hach\u00e9e pour une touche de vert. J&#8217;ajoute l&#8217;eau chaude que j&#8217;ai fait chauffer en parall\u00e8le. Je ne sais pas si \u00e7a change vraiment quelque chose, mais j&#8217;ai toujours l&#8217;impression que de mettre de l&#8217;eau froide ne va pas donner le m\u00eame r\u00e9sultat. Quand l&#8217;eau reprend son \u00e9bullition, j&#8217;ajoute des p\u00e2tes de riz.<\/p>\n<p>Pas de sel, pas de bouillon pr\u00e9par\u00e9 dont on ne sait pas trop combien il en contient, du sel.
